This Week’s Farm Fresh Recipe

Yellow Peach Gazpacho 

  •  6 ea Yellow peach 

  • 3 ea Garlic cloves 

  • ¼ each red onion 

  • 2 ea Heirloom tomatoes 

  • 1 ea English cucumber 

  • 1 tbsp Champagne vinegar 

  • Salt and Pepper to taste 

  • ½ cup Extra virgin olive oil 

  • Garnish with mint and pepperflakes 

Directions:  

  1.  Wash and Blend all the ingredients. Season to taste.   

 

Beets and Chevre Agnolotti 

  • 1 lb Fresh Pasta 

  • 5 each Cooked Beets 

  • 150 gr Chevre cheese 

  • 1 bunch Basil  

  • Balsamic vinegar. 

  • 8 oz brown butter 

Fresh Pasta Recipe: 

  • 850 gr bread Flour 

  • 275 gr Semolina 

  • 325 gr Egg yolks 

  • ½ cup cold water 

Directions: 

Place egg yolks and water  in a bowl and add flour and semolina kneading gradually.  Cover with plastic and refrigerate for 20 minutes.  

  • Roll pasta and build Agnolottis with beets and chevre puree.  

  • Cook pasta and finish  in a fried pan with brown butter.
